• Re: 2012 Newport Pig Cooking Contest

Wish that I could, but will be out of town that weekend. I've never been to Newport during the contest, even though I'm a certified NCPC judge and I compete in NCPC comps. Must try it someday! I can't see any sense in only having 4 judges to judge 85 teams!!! I think the NCPC needs to re-think their judging methodology for ...

  • Re: Best Price on pork products?

I normally use NAHUNTA at the NC Farmer's Market in Raleigh, as they usually have the best prices that I've found. Just plan ahead if you need a large quantity and let them know in advance. BJs and Costco SOMETIMES have pork at fairly resonable prices.

  • Re: Barbeque Judging

How about a follow-up to my previous follow-up... Here are a couple corrections to my previous post on judging: The Memphis Barbecue Network (MBN) training took approximately 5 hours and involved a pre-test, lectures, demonstrations from a cooking team (just happened to be the reigning WORLD CHAMPION for MBN - ''Yazoo's Delta ...

  • Re: Barbeque Judging

Here is a follow-up to my previous post relating to ''Certified Barbecue Judge'' training and sanctioning of events by various barbecue organizations in NC. The North Carolina Pork Council (NCPC) sanctions between 15-20 barbecue competitions each year with most of them being ''whole-hog, on-site'' contests. There are a couple other ...

  • Fat Cat's Pork-N-Beans BBQ

WOW! This is the BEST barbecue that I've ever had in a restaurant!!! ANYWHERE!!! I was disappointed when I pulled into the parking lot and discovered that my previous favorite Q-joint had closed, that is until I tasted this new offering! Country Barbecue had previously occupied this facility and had wonderful Q, but this new ...

  • Sugar Shack in Roxboro

Sugar Shack is a VERY small establishment just off of Hwy 501 in Roxboro, NC. They have a BBQ sandwich on the menu, but also have a BBQ plate that they don't advertise. I got the plate and overall it was a very good meal for only $5.66 including tea and tax. There wasn't much chopped pork on the plate (about the amount you would ...

  • Work in Gastonia with a chance to try some barbecue!

I spent some time this week in Gastonia and took the opportunity to stop at three Q-joints in the area. I went to two other locations that ''Google'' had listed as barbecue restaurants, but they were closed: ''Big Mans Bar-Bq of Gastonia'' is now a toy shop; while ''Carolina Country Barbecue'' on Union Road is a tea room. I did get to ...
