• First Competition

Well, we just entered in our first comp ever...We entered the Wirlygig Festival in Wilson, NC. It will be a small one. I don't think it is a KCBS or anything like that, but just a local deal w/ a chance to compete in the state cookoffs. We have been wanting to know how our bbq stacks up to others, so this is a great place to

  • Re: NC is missing from the World Championship

I think the reason you don't see more teams from NC is because that comp is a KCBS if I am not wrong. The KCBS focuses on the sweet and tangy sauce along w/ the low n' slow smoking where as true traditional NCBBQ is done primarily over either coals or gas. Plus, for what ever reason, the vineager sauce is not liked too much at the

  • Re: Welcome

I am lucky to live in Wilson, NC. We have several great que places w/i a stones throw of each other....my favorite place is Parkers. And is is mainly b/c of their slaw...I like the tangy mustard flavor it has. The bbq and stuff are very similar to Bills in my mind's eye, but of course, none of them are as good as what I can put out on ...

  • Re: Never use lighter fluid!

I second the chimney!!! I haven't used lighter fluid in over 3-4 years now....I usually use the burner from my grill to light the chimney. It lights and gets going in about 4 min!!!! That's just great for a quick meal..
