Re: How to get tender cue

    Hey Darren,
Sorry it took me so long to respond, but I've been in Evansville, Indiana judging a barbecue competition since Friday.

As far as what I use for rub - I've tried and used several different rubs avaialble in our local grocery store and they seem quite good by themselves; therefore, I've not tried to make my own rub YET! If you can get any of Byron Chism's "Butt Rub" it is really good too.

Here is a quick and easy recipe that will probably work good for you:

    Ingredients:
    •2 tablespoons salt
    •2 tablespoons sugar
    •2 tablespoons brown sugar
    •2 tablespoons ground cumin
    •2 tablespoons chili powder
•2 tablespoons freshly ground black pepper
    •1 tablespoon cayenne pepper
    •1/4 cup paprika

    Preparation:

Combine all ingredients in a small bowl and mix well; use as a dry rub on beef, chicken, lamb or pork.

Try it, you might like it!!!
