    The pic looks good Donald.&nbsp; When I have time over the holidays, I'll try to post a little bit on this past years catering events so that maybe that will help those who are looking to get into this. It was a great year for us!!!!

    What about some interviews w/ competitors who are at these cookoffs, what ever the sanctioning body?&nbsp; Or w/ area pit builders?&nbsp; There are some fine pit builders willing to share info on what they do, what to look for and contact info for them?&nbsp; I know if I were looking a new pit, or cooker, then I would like someone to point out ...

    Well, after our first outing in the whole hog competition world, we didn't do that good, in fact, we can in dead last out of 18!!!!!&nbsp; The judges had some constructive critisism for us, but we just flat missed the mark.&nbsp; We used a mixture of smoke wood for that smokey flavor that all of our customers have liked so far...we that was not ...

    Yea Donanld, I am reading this...I too would like to see this site grow..it has a lot of potential.&nbsp; And I like the founding fathers idea...it would be good to reconize those who help alot....

    OK, so the comp is over and we came in dead last!!!&nbsp; We couldn't believe it, but that is what happened...We got there Fri evening and when the hogs were handed out, ours was only 65#.&nbsp; On the entry form, they said the hogs would average 100#, and ours was one of the largest!!..&nbsp; We did learn alot from those who have competed at this ...

    Here is a link for the contact info....http://www.ncfestivals.com/festivals/details.asp?memberid=104 The dates are 2-4 Nov w/ the cookoff starting Fri evening and judging on Sat am....It only costs $100 to enter...

    My partner just talked to the orgainizer the other day and he said there are a few spots left.&nbsp; We are likely going to cook two hogs, just to try out two different styles at the same time...So come on out and give it a whirl!!!

    I&nbsp; haven't heard anything on Mitchell's as of late.&nbsp; But I did have some of Bill's out of Wilson last night.. Not too bad.&nbsp; Good, quick service.

    My buddy just told me yesterday that the organizer of the pig cookoff said that they are only going to allow 20 entries in the comp.&nbsp; Not sure why 20, but if you are interested, go ahead and contact them.&nbsp; We were actually the first one that he recieved payment and entry from...
