Quick Hopping John

Serves 6-8
1 cup boneless pork, cubed 1 pound bacon,
uncooked, chopped 1 large onion, chopped 1 ½ cups water 1
cup rice, uncooked 5 cups canned black eyed peas, including liquid 1
teaspoon cayenne pepper (or more, to taste) Salt & pepper to taste
Sauté bacon and onions until onions are clear and tender. Add
all other ingredients to pan and cook over medium heat about 30 minutes.
